The Walker Art Center 1750 Hennepin
I think the Walker has the most interesting collections of contemporary art I've ever seen, hands down (sorry MOMA, the Henry, Yerba Buena, PS1). In addition to that their special exhibits are great, the building was designed by Herzog & de Meuron, and their bookshop is top notch.

Nye's Polanaise 112 East Hennepin
A Polish supperclub/martini lounge, complete with a piano player, gigantic red booths and a multiple dining rooms. I'm not sure what was up with the jam band playing in the adjacent room but this spot definitely has an unusual atmosphere.
